I've come across two additional resources in the last 24 hours that are influencing my practice and contemplation of the Lenten season.

Tearfund is leading a Carbon Fast. 

And Harper One released The Green Bible last year.  Christianity Today published an intriguing article last week about it and how it relates to Bible editing, publishing, production, and reading: Meager Harvest.
